Turkeys should always be fully defrosted before cooking. Cooking times and defrosting instructions are included on the product label and on our website.
The key is careful defrosting, temperature control, careful cooking, and resting. We have a full roasting guide on our blog, and would recommend reading that for full details about how to best cook your turkey.
It’s also very important to let the bird rest for at least 30 minutes before carving, which allows the juices to redistribute, keeping the meat moist and flavourful.
Rest the turkey for at least 30 minutes, ideally longer. This helps the juices settle, keeping the meat tender and juicy. The turkey will stay warm, so there’s no need to cover it tightly.

Allow 12-15 hours of defrosting per kilogram of meat in the fridge. Always ensure it’s fully thawed before cooking, and never refreeze once defrosted.
For most of our turkeys, including the British Free-range Bronze Turkey, the turkey is safely cooked when the internal temperature reaches at least 65°C. Once this happens, remove it from the oven and rest in a warm place for at least 30 minutes. Always check juices run clear, there is no pink meat, and the bird is piping hot throughout.
