Enjoy the deep flavours of this deliciously lean and tender Wild Red Deer Fillet Loin. This mouth-wateringly tender roast is perfect when served with roasted seasonal vegetables.

Cooking instructions
Cooking guidelines from defrosted: remove fillet from packaging and pat dry with kitchen paper, allow to come to room temperature for at least 15 minutes.
Pan fry: preheat a heavy based frying pan to a high temperature, add a little oil or brush the oil directly onto the meat. Place in the pan and cook on each side for 2-2½ minutes for medium or 3-4 minutes for well done.
Once cooked rest in a warm place for at least 4 minutes before serving.
Low temperature: preheat oven (with fan off) to 80°C and place roasting tray in oven to heat up. Heat a heavy based frying pan on a high temperature, add a little oil or brush directly onto the meat and sear the meat for 3 minutes on all sides to brown.
Season the meat with salt and pepper, transfer to the roasting tray. Cook in the oven for 45-60 minutes.
Ensure product is piping hot throughout before serving.
Do not reheat once cooked.
