Cooking guidelines from defrosted
Remove all packaging and allow the beef to defrost thoroughly in the refrigerator. Pat dry with kitchen paper and leave at room temperature for 30 minutes before cooking.
Preheat the oven to 250°C / Fan 230°C / Gas 9.
Place the beef in a roasting tin and season with salt and pepper. Roast for 15 minutes to brown the outside, then reduce the oven temperature to 190°C / Fan 170°C / Gas 5.
Recommended additional cooking times per 500g:
Rare: 10–15 minutes
Medium: 15–20 minutes
Well done: 25–30 minutes
Remove from the oven, cover loosely with foil and leave to rest for 15–20 minutes before carving into thin slices.
Cooking appliances vary in performance, so these timings are approximate. For best results, use a meat thermometer to check the internal temperature.
