Melt-in-the-mouth grass-fed British lamb, expertly hand-prepared in Inverurie by our Butchers and left on the bone to enhance the depth of flavour. Our grass-fed lamb is naturally lean, tender and bursting with a rich meaty flavour. A celebration of traditional butchery and perfect for those who appreciate high-quality dining.

Cooking instructions
Cooking guidelines from defrosted: remove all packaging and pat dry with kitchen paper. Allow at least 30 minutes for the meat to come to room temperature.
Preheat oven to 250ºC / fan 230ºC / gas 9. Place the joint in a roasting tray, drizzle with oil and season with salt and pepper.
Sear the meat for 15 minutes in the oven then use the below guide.
For medium: reduce oven temperature to 180ºC / fan 160ºC / gas 4
Then continue to cook for:55-70 minutes (internal temperature of meat: 55-60ºC)
For well done: reduce oven temperature to 190ºC / fan 170ºC / gas 5
Then continue to cook for: 85-95 minutes (internal temperature of meat: 65-70ºC)
Once your joint is cooked to your liking, remove from the oven. Cover with foil and leave to rest for at least 20 minutes.
