Tender whole lamb leg hand prepared in our Aberdeenshire butchery for easy carving. Studded with sprigs of rosemary and garlic cloves for a classic blend of flavours.
COOKING INSTRUCTIONS
Cooking guidelines from defrosted: remove all packaging and pat dry with kitchen paper. Ensure the joint is fully defrosted prior to cooking.
Allow to sit at room temperature for at least 30 minutes prior to cooking.
Pre-heat oven to 230°C / fan 220°C / gas 9.
Place the joint in a roasting tray, garlic & rosemary facing up. Drizzle with oil & season well with salt and pepper. Place the tray on the middle shelf of the preheated oven and sear for 15 minutes.
Reduce oven temperature to 180°C / fan 160°C / gas 4 and cook for:
Medium: 50 - 65 minutes. Well Done: 80 - 95 minutes.
Remove from the oven and rest for at least 15 minutes in a warm place.
Medium Internal temperature of meat: 55- 60°C.
Well done Internal temperature of meat: 65-70°C.
After resting, snip the strings, carve and serve.
