Sicilian Lasagne

Flavourful lamb mince brings out the flavours in this southern Italian lasagne recipe. Sweet tomato and sharp, creamy cheese give the perfect finish to Sicilian lasagne. Perfect for a new twist on a classic.


  • 400g Minced Lamb
  • 250g diced vegetables (red pepper, carrots, shallots)
  • Chopped tomatoes
  • 1 tsp dried oregano
  • Salt and pepper
  • 150g ricotta
  • 100ml cream
  • 350g precooked lasagne sheets
  • 100g grated parmesan
  • 100g breadcrumbs


  1. Braise the lamb mince in a heavy pan until nicely browned, add the vegetables and braise for another 5 minutes.
  2. Add the chopped tomatoes and simmer for 20 minutes, then add the oregano and season with salt and pepper.
  3. Separately mix the ricotta and cream.
  4. Grease an ovenproof dish and fill in layers one on top of the other, using the lasagne sheets, mince and cheese mixture.
  5. Sprinkle with the parmesan and breadcrumbs on top, place in the oven at 180°C/Fan 160°C/Gas 3 for 40-50 minutes and serve with tomato salad and basil.
