Cooking guidelines from defrosted: remove from packaging and pat dry with kitchen paper. Allow the meat to come to room temperature for at least 15 minutes before cooking . Preheat oven to 200°C fan / gas 7. Heat a pan on a medium high temperature, add a little oil or brush directly on to the meat. Sear the meat on all sides for 4-5 minutes. Place the rack in a roasting tin and cook in the centre of the oven uncovered for;
Medium: 14-15 minutes
Well done: 20-22 minutes
Remove the rack and allow to rest in warm place for 15 minutes before serving.
