
Mexican Slaw
INGREDIENTS
Slaw ingredients:
- 350g red cabbage, shredded
- 100g cucumber, thinly sliced
- 100g carrots, shredded
- 150g red pepper, thinly sliced
- 50g spring onion, thinly sliced
- salt & pepper
- fresh coriander leaves to garnish
Dressing ingredients:
- 2 tbsp olive oil
- 1 tbsp honey
- 50ml lime juice
- 1 clove garlic, crushed
- ½ teaspoon ground cumin
- ½ teaspoon smoked paprika
- salt & pepper to season
METHOD
- Whisk together all the dressing ingredients in the bottom of a large salad bowl
- Add all slaw ingredients to the bowl, season with salt and pepper to taste and toss well to combine
- Garnish with freshly picked and chopped coriander leaves
