A delicious twist on the classic gammon joint. Subtle notes of sweet maple & warm bourbon beautifully complement the distinct saltiness of the gammon. This joint has been scored to produce a lovely crunchy crackling and develops a wonderful sticky glaze during cooking.
HOW TO STORE
- Storage: Keep frozen at -18°C or below
- Defrosting guidelines: Allow at least 12-15 hours of defrost time in refrigerator per kg of meat. Do not re-freeze once defrosted
- Shelf life defrosted: Store in refrigerator and use within 24 hours
COOKING INSTRUCTIONS
Cooking guidelines from defrosted: remove all packaging.
Allow the joint to sit at room temperature for 30 minutes prior to cooking.
To calculate cooking time. You will need approximately 30 minutes per 450g. plus 25 -30 minutes
Oven: preheat oven to 180°C / 170°C fan / gas 5.
Place joint in a roasting tin, wrap the exposed meat in foil, leave the rind uncovered.
Cook on the middle shelf of the oven for the calculated time. To finish the joint remove it from the oven 15 - 20 minutes before the cooking time is complete.
Increase the oven temperature to 220°C fan. Remove the foil, add a little water to the tray, baste then return it to the oven to finish cooking for the further 20-30 minutes or until juices run clear you will need to baste occasionally.
Once fully cooked rest for at least 20-30 minutes before serving.
