
Rainbow Slaw
INGREDIENTS
- 1/4 red cabbage, shredded
- 1/4 white cabbage, shredded
- 2 medium carrots, peeled & cut into fine strips
- 1 yellow pepper, seeded and finely sliced
- 6 spring onions, trimmed, washed and finely sliced
- 4-5 Radish sliced finely
- 1 tbsp Honey
- Salt & Pepper
- Dressing
- 150g natural yogurt
- 2 tbsp single cream
- 1/2 garlic clove, crushed
- 1-2 tsp lemon juice
- Chopped chives to garnish
METHOD
- Combine all the prepared slaw ingredients in a bowl and season with salt & pepper, mix well to blend all the ingredients & colours
- Combine all the dressing ingredient in a bowl then fold into the slaw ingredients, mix well to combined, decant into a serving dish & sprinkle with chopped chives.
